Ingredients

1. Spanish smoked paprika from "Lubystok" - 1/2 tsp.
2. Black ground pepper "Lubystok" - to taste
3. Himalayan pink salt - to taste
4. Garlic - 1 pc
5. Eggplants - 3 pcs
6. Olive oil - 50 ml
7. Sour cream - 2 tbsp.
8. Sesame - 20 g
9. Lemon juice - 25 g
10. Parsley - 3 sprigs

Preparation:

  1. Heat the oven to 170°C. Prick the eggplants with a fork, peel the garlic, brush with oil and bake everything in the oven. Wrap the garlic in foil and cook for 20 minutes. Eggplants should be cooked for 45 minutes
  2. Wrap the finished eggplants in foil and leave for 15 minutes.
  3. Peel the eggplants, remove the seeds. Place the pulp in a colander and leave to drain excess liquid.
  4. In a blender bowl, mix Lubystok sesame, 25 ml of oil and lemon juice. Mix
  5. Add softened eggplant, garlic, Himalayan pink salt, pepper and Spanish smoked paprika from “Lubystok”. Knock down. Adjust the spiciness of the spices to your own taste.
  6. Add sour cream and green parsley without sprigs to the resulting paste. Knock down.
  7. Transfer the paste to a deep plate and put it in the refrigerator for an hour.
  8. Serve babaganush snack with crackers, pita chips or chopped vegetables.
