Zucchini pancakes

Zucchini pancakes are delicious and healthy. We cook homemade delicacies together using natural spices from “Lubystok”.

Ingredients

1. Zucchini - 500 g
2. Carrots - 2 pcs.
3. Onion - 1 pc.
4. Flour - 4 tbsp.
5. Sour cream - 100 g
6. Chicken eggs - 3 pcs.
7. Ground black pepper "Lubystok" - to taste
8. Himalayan pink salt "Lubystok" - to taste
9. Butter - 2 tbsp.
10. Oil - 100 g

For garnish:
1. Mushrooms - 5-7 pieces.
2. Onion - 1 pc.
3. Fresh herbs
4. Fried bacon - 100 g
5. Cherry tomatoes - 5 pcs.

Preparation:

  1. Grate zucchini, onions and carrots on a fine grater. Add Himalayan pink salt and ground black pepper from “Lubystok”.
  2. Add flour and chicken eggs to the vegetable mass, mix everything thoroughly until smooth.
  3. Pour sunflower oil on a well-heated frying pan and spread 1 tbsp. spoon of vegetable mass. Fry each pancake on both sides until golden.
  4. Spread the pancakes on paper towels to get rid of excess oil.
  5. For garnish, prepare mushrooms, which are fried in oil with onions. Also, fried bacon tastes good with zucchini pancakes.
