Focaccia is a spicy and incredibly fragrant Italian pastry. Traditionally, Italians prepare it with a variety of fragrant fillings.
Ingredients preparation time:
1. Dry yeast "Dobryk" - 10 gr.
2. Flour - 500 gr.
3. Water (warm) - 200 ml.
4. Olive oil - 1 tbsp. l.
5. Himalayan pink salt - 2 tsp.
6. seasoning "Italian herbs" from the line "Tastes of the World" - 2 tbsp.
7. Potatoes - 400 g
8. Organic sugar "Dobrik" - 2 tbsp.
Put sugar and yeast in a deep bowl and mix with 60 ml of water. In 5 minutes the yeast will “start working”.
Mix flour with salt, add olive oil, yeast and 3/4 of the remaining water. Stir gradually, adding the remaining water until the dough is collected in a loose ball. Transfer to a floured surface and knead for 8 minutes until the dough is smooth.
Grease the inner surface of a large bowl with olive oil and roll a lump of dough in it. Make a cross cut at the top of the dough.
Leave the dough in a bowl, cover it with a kitchen towel and place in a warm place for 1-1.5 hours. The dough should increase in volume.
Next, “hug the dough” to its primary size, and then roll out a rectangle measuring 38×28 cm.
Lightly grease the pan with olive oil and sprinkle with cornflour. Place the dough in the center of the tray and, pressing, stretch so that it fills the entire space. Cover the pan with a kitchen towel and leave in a warm place for 2 hours to rise again.
Dough + filling = focaccia
When the focaccia dough has risen, start stuffing.
Take the potatoes, wash, clean and finely chop.
With a light pressure, press the sliced potatoes into the dough, sprinkle with Italian Herbs seasoning from the line “Tastes of the world” of the Trading House “Lubystok”, add Himalayan pink salt and pour olive oil on top.
Bake focaccia in the oven at 260 ° C for 10 minutes.
